Pork loin with Mild Tamarind sauce Glaze

2 cleaned Pork loins
1 tsp. of ground garlic
1 tsp. fresh chop sage
1 fresh sage sprig
1 tsp. salt
½ tsp. pepper
½ cup white wine
3 tsp. olive oil
½ cup of Mild Tamarind Sauce
1 tbsp. Butter

Cooking Instruction

1. Season the pork loins with salt and pepper
2. Heat deep frying pan and add olive oil
3. Place seasoned Pork loins in pan and brown on all sides (1-2min per side)
4. Add garlic and sage, cook for 1-2 minutes
5. Deglaze with white wine and top Mild Tamarind Sauce, then cover with lid (cook for 5-10min )
6. Remove from pan and let cool for 5-8 min
7. Add butter to pan reduce for 1-2 mins.
8. After cooling place on cutting board and slice into medallions
9. Place on plate and ladle Tamarind glaze on top pork
10. Garnish with fresh sprig of sage
